A rare expression from the Devil’s Botany Mettlesome Libations series, this Bourbon Barrel Aged Absinthe spends 12 months resting in an ex-Wild Turkey bourbon cask, where oak, spice and vanilla slowly intertwine with the bold botanicals of absinthe. The result is a deeply layered spirit that bridges two worlds — the herbaceous intensity of absinthe and the warm, rounded character of bourbon. Rich, complex and unapologetically bold, it’s a bottle built for curious drinkers who appreciate both absinthe’s notorious past and whisky’s barrel-aged depth

Limited Release Absinthe Aged for 12 months in a first-fill ex-Bourbon barrel

A devilish blend of aromatic botanicals — including Green Anise, Fennel Seed, Grand Wormwood, Southernwood, Blackberry Leaf & Devil's Claw Root — is enlivened with the notes of toasted oak, vanilla and toffee from the ex-Bourbon barrel. Completely natural in colour and flavour, Devil's Botany Bourbon Barrel-Aged Absinthe is perfectly served over ice to release the essential oils held within the spirit. 

Barrel Aged Absinthe

A truly unique flavour profile. Aromatic spices such as Green Anise & Fennel warm the palate, followed by prickly pepper from Southernwood. Blackberry leaf compliments the dark fruits revealed from the charred barrel and finishes with smooth vanilla and toasted oak.

Absinthe is a botanical spirit distilled with grand wormwood, green anise and fennel seed, also known as the holy trinity of absinthe. In addition to these three, each distiller can use their own blend of botanicals to achieve the unique flavour profile they are after. Traditional absinthe is a spirit, not a liqueur. No sugar should be added when bottled. All distilled absinthes start clear. In order to create a green style of absinthe, this distillate is then infused with a new mix of botanicals to get its natural colour from the chlorophyll.

Completely natural in colour and flavour, the barrel-aged absinthe is perfectly served over ice to release the essential oils held within the spirit. 

Absinthe was banned for nearly a century in many countries around the world. It is the only spirit ever singled out in a prohibition of this kind. It was never made illegal in the UK, which meant that many of the great classic cocktails to come from Britain during the 1920s and 30s called for absinthe in their recipes. Modern science finally caught up and disproved the 19th century theories that originally had it banned and regulations were changed around the world to finally make absinthe legal again.
