• 25ML Absinthe Regalis
• Diluted with 75ml ice cold water poured over a sugar cube.
Method: Fill an absinthe fountain with ice and water and allow it time to thoroughly chill. A carafe if ice water can be used if you do not have a fountain.
Pour the absinthe into your glass. Balance an absinthe spoon across the top of the glass with a sugar spoon on top. Allow the water to drip slowly over the sugar cube into the glass. As the water mixes with the absinthe, the essential oils from green anise and fennel seed will become visible, turning your Absinthe Regalis from a clear emerald to beautifully opaque pale green.
